We work exclusively with carefully selected cacao beans sourced from small farms in Ecuador and Madagascar, regions internationally recognized for their exceptional cacao quality. Each origin brings a distinct character — from floral and fruity notes to deeper, earthy undertones — allowing every bar to express a refined and singular sensory profile.
A PATIENT CRAFT
The beans are slowly roasted in small batches to preserve their natural aromas, then stone-ground and refined over time to achieve a smooth, balanced texture. This patient process enhances complexity without overpowering the purity of the cacao.

OUR STORY
Elyra was founded in 1988 by two brothers from Piedmont, Northern Italy, a region long associated with fine chocolate craftsmanship.
Their shared travels across cacao-producing regions introduced them to chocolate as a product shaped by origin, climate, and human care — not just by recipe.
Spending time with small producers in Central America and the Indian Ocean, they learned how decisions made at the farm level — from fermentation to drying — define the character of cacao long before it reaches the workshop. These experiences shaped a clear philosophy: quality is defined long before production begins.
Upon returning home, the brothers began producing chocolate in small batches, applying what they had learned with a disciplined, hands-on approach. From the beginning, Elyra was guided by restraint — fewer ingredients, precise processes, and respect for the natural expression of cacao.
More than three decades later, Elyra remains committed to that original vision. The scale has evolved, but the principles remain unchanged: thoughtful sourcing, careful craftsmanship, and chocolate made with intention.
